Single Serving Blueberry Peanut Butter Overnight Oats
One of my favorite breakfasts that I pretty much make every single day whether I’m going to the office or I’m at home is overnight oats. I love overnight oats because of the convenience, the ease to make and the endless combinations. So today I’m sharing one of my favorite overnight oats recipes to help you prepare a nutritious filling breakfast for yourself or your kids to take on the go or enjoy at home.
Ingredients (dry):
1 cup quick oats
3 tablespoons powdered peanut butter
2 tablespoons chia seeds
1/16 teaspoon or sprinkle of salt
Ingredients (wet):
3/4 cup of water
1 cup non dairy milk (I like soy milk!)
3 tablespoons of maple syrup
1/2 teaspoon vanilla extract
Mix-ins:
3/4 to 1 cup frozen blueberries (depends on the size of container you use)
Instructions:
Mix all of your dry ingredients into a 22oz container or larger
Add all of your wet ingredients and stir to combine.
Add the fruit and slowly mix in. I find that 3/4 - 1 cup of fruit can fit in my jar however if you use a larger container you can add more.
Let sit overnight in the refrigerator and enjoy in the morning!
Tip: I’ve made up to three days of overnight oats to save me time!
