Plant-Based Apple Coffee Cake
Growing up my mom used to make all kinds of baked goods and delicious desserts. Once of my favorites was her coffee cake. So today I am sharing a delicious apple coffee cake recipe based on my mom's recipe. This recipe can be enjoyed for breakfast, brunch or even dessert!
Instructions:
Preheat oven to 375
Mix together soy milk and apple cider vinegar and let sit for 5 minutes
Mix together the crumble ingredients and sit aside
Grease or spray a 9x13 metal pan
Once the soy milk mixture is ready, mix all of the cake ingredients together with a hand mixer on medium speed for 2 minutes
Pour half of the cake batter into the pan and spread to make sure it is even
Then layer half the crumble mixture and half the chopped up apples on top
Pour the other half of the cake batter on top and spread it around until even. Don’t worry if you don’t have neat layers!
Then later the remaining crumble mixture and the chopped up apples on top. Spread the mixture around to make sure it’s all even. Again don’t worry if the layers a neat as that’s part of the deliciousness!
Bake on 375 for about 30 minutes. I would suggest checking at 25 minutes with a toothpick to see if it comes out clean or with a few moist crumbs attached as that would indicate the cake is done.
